Each class started with Lima giving an overview of the recipes, ingredients and interesting personal anecdotes.

Students made notes in the packet of printed menus that would comprise an entire series of 11 classes.

There were four levels of classes which culminated in receiving cooking teacher certification from Lima's Cooking Academy at Nippon CI. The four levels consisted of 8 series of classes with 11 menus per series for a total of 88 classes to receive certification. Classes were taken two nights a week to cover two series at a time so that one could finish in a period of two years.
